Job Summary:


To be responsible for assisting Executive Chef in all his duties. To be assigned to replace the Excutive Chef during his absence. Serves as “Outlet-in-charge" of the Section. Supervises all his staff and assures that quality and cost standards are consistently attained.


Job Specification:

  • Supervises and instructs kitchen staff in guidelines set by the Executive Chef in order to obtain satisfactory food preparation and achieve improvements.
  • Makes sure of consistent high standard of food service in all kitchen outlets.
  • Train and control standardised recipes for food and menu items of various outlets.
  •  Brings continuously new ideas to improve the quality and varieties of dishes.
  • Ensure speedy and excellent food service at the pass and makes sure of perfect food presentation.
  • Supervises production and set up of buffets in the different food outlets.
  • Keeping control of productivity and be aware of hygiene standards and follow up on them.
  • Work close with Chief Steward together to ensure a smooth operation.
  • Checks that all mise en place is done to the amount of work load taking in consideration in house count, functions, out side catering and bookings 
  • Inspires the entire brigade by his punctuality, temperance and ability to convey orders with diplomacy.
  • Carries out daily inspections of refrigerators and checks the quality of food which is stored there.
  • Checks the quality of food, which is delivered daily.
  • Co-ordinates and delegates production and service between various outlets.
  • Assists in keeping daily control over food cost
  • Maintains good relations with service brigade to keep a co-operative atmosphere between cooks and service personnel.
  • Performs banquet service and supervise its preparation and service.
  • Replaces Executive Chef if necessary and is in charge of the kitchen operation.
  • Any other work assigned by the Executive Chef

Job Requirement



  • Vocational Training of Professional Cooking in Western Cuisine
  • 8 years working experience with 2 years supervisory experience.
  • Good communication skill and be able to communicate effectively with diverse workforce.
  • Able to stand at least 8 hours in kitchen area with hot environment.
  • Initiative and ingenuity are mandatory since the job receives only general supervision. Must have optimistic personality to handle high-pressure environment. Outgoing and ready for effective communication with staff and member.
  • Good common sense for making daily on-the-job decisions.
  • Good command of Oral English and Cantonese
