We are currently looking for a high caliber candidate to join our Production team as “Executive Sous Chef".

Job Summary:

  • Reporting to the Executive Chef Operations 
  • Be responsible for the kitchen during absence of  the Executive Chef Operations
  • Be responsible for daily monitoring of the preparation of the pre-designed meals for multiple customer accounts with culinary expertise through the management of all Chefs, Sous Chefs and kitchen Workers at the unit, and promoting and providing quality food services to airline clients

In this role, you will:

  • Act in support of the Executive Chef to drive menu and product quality in all production areas by overseeing food preparation and production, by consulting with the Buyer; Chefs, cooks, and team leaders; minimize waste through portioning, over boarding over-production, and inventory control
  • Be the Culinary Lead for the unit in the absence of the Executive Chef
  • Ensure Menu presentations are properly planned, set up, and specifications reviewed to ensure compliance to recipes and portion specifications as required by the customer
  • Adhere to recipes and portion specifications as required by the customer by understanding consumer tastes and nutritional needs; reviewing product specifications; evaluating ease of menu preparation; applying established procedures and budgetary constraints
  • Improve menu quality and consistency by analyzing food production records and menu expenses; promoting kitchen staff interest in quality improvement; studying, evaluating, and re-designing processes; implementing changes
  • Prepare menu and food preparation reports by collecting, analyzing, and summarizing food, dining, and customer data and trends
  • Maintain safe, secure, and healthy work environment by establishing, following, and enforcing standards and procedures; complying with sanitation and federal, state, and local legal regulations; overseeing food preparation, safety, and security; reviewing and implementing accident and disaster plans
  • Maintain professional and technical knowledge by attending educational workshops; reviewing professional publications; establishing personal networks; benchmarking state-of-the-art practices; being sought for opinions as a culinary expert; contributing to professional publications; participating in professional societies and sharing this information with direct reports
  • Ensure quality production standards are followed and maintained.
  • Ensure employees adhere to HACCP, FDA and safety regulations and compliance with company policies and procedures
  • Train and monitor employees on proper work procedures and production of products to ensure maximum productivity with minimum labor and food expenses.
  • Prepare administrative reports as required
  • Monitor daily manpower planning and employee turnover
  • Ensure full understanding and follow legislative requirements in line with International Food Safety, Health and Safety, Security and Environment controls

To be successful in this role, you should meet the following requirements:

  • Associate Degree or Bachelor Degree in the Culinary Arts or a related field, (formal culinary education) required.
  • Minimum 7 – 10  years as a Chef required
  • Minimum of 1-3 years supervisory experience working in a high volume, manufacturing, food production and restaurant or catering environment required
  • Certification as CCC from ACF, ProChef II or equivalent
  • Completed vocational training in culinary and related hygiene course
  • ServSafe Certified preferred
  • Ability to obtain ServSafe Certification required
  • Excellent communication skills with internal and external customers
  • Understanding of large scale production and assembly essential
  • High command of written and spoken English
  • Good presentation skills
  • Good IT skills
