Duties & Responsibilities:

  • Create and update the wine list in coordination with culinary team and Food & Beverage Manager
  • Recommend food and wine pairings
  • Advise guests on wines based on their personal tastes and food choices
  • Inform guests about different varieties of wines and prices
  • Ensure wines are served at the right temperature and within the proper glassware
  • Store open bottles properly to maintain strong taste
  • Manage Gourmet 10 wine section and ensure it is fully-stocked
  • Train staff on available wines
  • Negotiate purchase prices with vendors
  • Ensure selling prices are right
  • Organize wine tasting events and wine dinners
  • Comply with all health and safety regulations

Job Requirements:

  • Minimum 4 years as Sommelier in hotels or private clubs
  • WSET 3 qualification or above
  • Ability to create tasteful food and wine pairings
  • Understanding of the winemaking process
  • Extensive knowledge of different wines and which regions produce each type
  • Knowledge of vineyards and wineries
  • Excellent interpersonal and communications skills
  • Good command of spoken English and Cantonese
  • Availability to work during opening hours, including weekends and holidays
  • Shift duties required
