Job Responsibilities:

  • Responsible for all relevant hygiene and food safety planning, implementation and monitoring in order to meet the high standards of brand and government food safety policies;
  • Ensure all aspects of the hygiene service complying with the regulations, licensing conditions and codes of practice;
  • To drive continual improvement in accordance with the international audit standard of ISO14001;
  • Prepare Food Safety SOPs, working out for cleaning schedules and their implementation along with chief steward, food & beverage staff training;
  • Ensuring Food Hygiene and Sanitation SOP’s at all production areas, dishwashing utilities, receiving and storage areas;
  • Supervise the food safety and hygiene management of all kitchens and F&B outlets of the hotel;
  • Conduct routine house and supplier audits and inspections of the hotel areas in all aspects of hygiene and food safety;
  • Develop and drive ongoing training for all staff on food safety and hygiene;
  • Cooperate with routine inspections and audits from external sources.

Job Requirement:

  • Degree / Diploma holder in food safety / food science or other related discipline;
  • Hygiene Manager or similar certification is required;
  • Minimum 5 years solid experience in the hotel or catering field;
  • Experience in implementation of a food safety management program or HACCP ISO system is an advantage;
  • Good command in both written and spoken English and Chinese;
  • Candidate with less experience will be considered as Assistant Hygiene Manager.
