  • Establish and maintain hygiene system for kitchens, F&B outlets, stewarding areas & food storage rooms
  • Carry out regular restaurants, bars, pantries, food stores and kitchens hygiene audits and ensure operation complies with the Hilton Food Safety standards and local health authorities
  • Conduct daily and weekly inspection for restaurants, bars, stewarding areas, F&B stores and kitchens
  • Analyze and identify food safety risks in purchasing, receiving, storage and preparation of food and beverage and advise on necessary corrective actions
  • Liaise with Engineering department to implement preventive and corrective maintenance
  • Attend any hygiene inspections with local authorities
  • Arrange routine or adhoc lab testing with third party lab testing company
  • Drive investigations of guest complaints related to food hygiene and safety
  • Label and nutritional information review of in house products to ensure compliance with local regulations 
  • Implementation of pest management program
  • Conduct monthly supplier inspections with purchasing team
  • Conduct monthly Hygiene Committee meeting with necessary follow up
  • Update and maintain documentation systems, perform control duties (hygiene and safety) in all F&B outlets and kitchens
  • Carry out regular food hygiene analysis and critical points control for kitchens and F&B outlets
  • Plan and provide hygiene and food safety training for all related team members and ensure training matrices are being updated
  • Monitor and initiate corrective actions for all non-conformances and train all related team members on related food safety policies
  • Keep aware of food safety related regulations, market trends, systems and practices in the Hotel industry, both Hong Kong and internationally



  • Tertiary education in Science related subject, preferably in food related disciplines  
  • Certified FEHD Hygiene Manager with basic knowledge of Food Chemistry, HACCP and ISO certification
  • 5 years working experience in food & catering industry, preferably with at least 3 years solid experience in food hygiene and safety management
  • Good organization, communications and interpersonal skills
  • Strong in analysis and problem solving skills
  • Proficient in English, Cantonese and Mandarin
  • Proficient in computer operations (e.g. MS Word, Excel, PowerPoint & Chinese Word Processing)
