Job Summary:

To be responsible for assisting Executive Chef – Town Club in all his duties. To be assigned to replace the Town Club Executive Chef during his absence. Serves as “Outlet-in-charge" of the Section. Supervises all his staff and assures that quality and cost standards are consistently attained.  Direct supervision of kitchen brigade and outlet menu.

Job Duties & Responsibilities:

  • Supervise and instruct kitchen staff in guidelines set by the Executive Chef in order to obtain satisfactory food preparation and achieve improvements
  • Make sure of consistent high standard of food service in all kitchen outlets
  • Train and control standardized recipes for food and menu items of various outlets
  • Ensure speedy and excellent food service at the pass and makes sure of perfect food presentation
  • Keep control of productivity and be aware of hygiene standards and follow up on them
  • Work closely with Chief Steward together to ensure a smooth operation
  • Assist in keeping daily control over food cost

Job Specification

Education:

  • Vocational Training of Professional Cooking in Western Cuisine, Associates Degree from accredited US culinary school

Experience:

  • 6 years’ experience with progressive upward movement in high-volume, fast paced five star hotel or similar free-standing restaurant, club or ship environment

Professional qualification:

  • Hotel school, catering college, apprenticeship or other formal training preferred
  • Certification and training in internationally recognized sanitation standard such as ServSafe or HACCP

Skills & Personality

  • Possess strong knowledge of American Cuisine
  • Be able to work in a fast paced and high volume environment
  • With excellent organizational and time management skills
  • Initiative and proactive
  • A strong team player and effective communicater with all levels of staff and members
